This recipe from the Magnolia Table Cookbook is honestly great any time of year. I made it dead in the middle of summer, in the Texas HEAT I might add! Joanna Gaines really knows the way to your heart with this cookbook! It is filled with recipes that contain bacon and cheese, I mean what makes you happier in life? That about does it for me. ?? This one uses bacon and white cheddar, what more do you need!? But thank the lord that fall is coming, sooner than later I hope for Texas, and cooler temps will make you crave this soup.
This is a great base soup recipe that if you are the inventive type or just like you use recipes as a jumping off point, you could take in a million different directions. You could easily add mushrooms, or squash and make it completely vegetarian, or add in some chicken or pork and really make it a one pot meal.
One of the biggest tips I can give you is, if you plan to cook many of the recipes in this cookbook, like I am, you might just want to cook up a whole bunch of bacon while the oven is on for this recipe. The easiest way I have found to batch cook bacon in the oven is to line your baking sheets with foil, lay your bacon out and cook, then pop the sheet in the freezer for a while after taking you bacon off, then roll that foil right up and throw it away. This has been a life changer. It completely eliminates the bacon grease splashed all over the stove and having pull it completely apart to clean it. I even do a half sheet in my toaster oven if I am just doing a little bit. Ha but not that often because when do you only need a little bit of bacon!?!?!?
I went a little overboard with my potatoes when I made mine and ended up having to add in a little extra stock and some water. I FILLED a 7.5 quart Le Creuset to the brim. ? We loved this soup but I have to say we did end up throwing a little bit away so scale back your potatoes by about 1 and you should be right on. I can say that it pairs amazingly well with the Herb Cheddar Scones also in the book! How can you go wrong with more cheese and bread?
