This Classic Cheesecake recipe from Joanna Gaines and her new Magnolia Table cookbook Vol. 2 tastes great, but strangely, didn’t quite work. While the cheesecake still tasted great, the cake itself completely separated from the crust making it kind of difficult to work with. I will share a few pointers below to help yours turn out better than mine.
This is a pretty straight-forward and basic cheesecake recipe. Nothing really out of the ordinary and great classic flavor. But, the serving and getting it out of the pan is where the issues showed up.
The crust is my favorite part and this one just seemed to fall apart. I also think there needed to be more of it. I like a nice thick graham cracker crust on cheesecake for a contrast of flavor and texture.
I think this had a little bit to do with the suggestion that Jo makes to press the crust up the side. Personally I would just press the crust into the bottom.
This cheesecake recipe calls for sour cream and lemon juice which makes the texture a little more dense and tangy. That makes the recipe a classic, but it isn’t really my favorite.
If you want a full-proof cheesecake recipe that has the fluffiest texture check out my Peaches n’ Cream Cheesecake or my Pumpkin Cheesecake. You can use the flavor additions with either of them or leave them completely plain. The base recipe is perfect, never cracks, and has THE BEST flavor.
It’s my family’s favorite, that why I have a few variations on my website!
Beat each block of cream cheese into the mix one at a time to give the cheesecake a fluffy texture.
Place a parchment paper round in the bottom of the pan to prevent any sticking of the crust to the pan. Didn’t do much for me, but it is good insurance.
Top with the whipped cream and fruit, they just make the eating experience even better!
Overall, this Classic Cheesecake recipe is good and edible, but when in doubt, use this recipe 😝 I will be keeping a good hold on mine.
Until next time, Happy Cooking!
