It's my Birthday week and I woke up just wanting something really tasty for breakfast and I thought I would share it with my community here because it came out really tasty!

It literally takes less than 10 minutes, is packed with protein to fuel your day that is sure to be full of egg hunting family fun, and it is delicious! At its core, it is a simple ham and cheese Omelette recipe, but I kick it up with a rich mix of cheeses. That's what makes it a really great and different
So save a few of those eggs from getting boiled and steal a slice of Easter ham and add this winner to your menu. Feel free to use whatever cheeses that you or your family like, I happened to have a few nubs of multiple pieces of cheese laying around so I grated them all up and made this really fantastic blend that punched up a few basic ingredients a few notches.

Jumbo Sharing Omelette
This fantastic recipe is great for sharing! Bulk it up to feed more or remove some eggs to feed less. We are going for French Omelette style here so we will not be flipping! I know, news to many of your ears. The biggest issue I hear from people is that they fear they will make a mess trying to flip their eggs. This is why we will be cooking over low heat.
Ingredients
- 1-2 teaspoons Olive Oil
- 1 tablespoon Unsalted Butter
- 8-10 oz Ham Steak, diced
- 6 whole eggs
- Salt and Pepper, to taste
- 2 oz Sharp Cheddar, shredded
- 2 oz Parmesan, shredded
- 2 oz Gruyere, shredded
Instructions
- 1. Warm an 11-inch non-stick skillet over medium-low heat. Once the pan is warm add your olive oil and turn pan to coat.
- 2. Add in the butter and once it is melted add in your diced ham steak. Cook over gentle heat just until warms and beginning to brow slightly.
- 3. While your ham is cooking, crack your eggs into a bowl and whisk with about 1 tablespoon of water, salt, and a few cracks of pepper, until well combined.
- 4. Add the eggs to the pan and give it a swirl in a circular motion to keep the eggs loose. Allow the bottom layer to cook and set before you begin to move your eggs at all. Once you have a slightly solid layer of cooked eggs and soft on top being to lift the outer edges of your omelet, allowing the uncooked eggs to run under. This will create a fluffy airy omelet and help to evenly cook your eggs.
- 5. Continue to cook your eggs until they are almost completely set. A French omelet leaves the eggs fairly soft. (If you like your eggs well done, place a lid or piece of foil on top and the steam will cook your eggs to a firmer texture.)
- 6. This is the point when you want to add your cheese on top of your eggs. Add as much or as little as you like.
- 7. Now begin to roll up your omelet. I roll from the handle to the outer edge, this lets me make my final roll onto the plate and keeps me from fighting with it too much.
- 8. Top with more cheese maybe a few more cracks of black pepper and a few slices of green onion or your favorite herb and enjoy!

I hope you get to enjoy this weather it is for Easter or just weekend brunch. The cheese mixture is really what amped this up, but again, use what you got. This is what makes it a KendellKreation, but feel free to make it yours.
Also, I know some might think that the oil and the butter is a lot, but you will want a good bit of fat to 1. Keep the eggs from sticking (yes even in a non-stick pan, and 2. To keep your eggs light and fluffy, the butter really helps this. Another great thing about this is you can add a couple of eggs if you want to feed a few more people or take a couple away and use a slightly smaller pan to feed a few less.
