Soooo, I have to say, I’m not really one to make queso, I have said before in previous posts that I have worked over the years to reduce the amount of processed foods that I have in my kitchen. Now I am nowhere near grinding my own flour yet, but I just try to make better decisions all around. So this recipe is the only time you will find Velveeta in my kitchen. This isn’t the only recipe in the Magnolia Table Cookbook that calls for it, but this is the only one that I have used it for.
I grew up with a father in the military so they basically handed us Kraft cheese singles for free, and that’s what I grew up on. I’m not saying that it’s a bad thing, I just have learned better and try to avoid it these days. That’s not to say I don’t crave a grilled cheese made with them from time to time, I mean it’s in my blood. BUT, when I can avoid it I do. I don’t do much dairy anymore anyway, I live in Texas and my allergies are so bad that, that seems to be the only thing that helps keep them subdued.
All that said, I really enjoyed this recipe, it is quick and simple to make and using the chicken stock to thin out the sauce really added a very welcome punch of flavor that I loved! It really makes it next level, I wanted to eat it like a soup it had so much flavor. Just put some in a coffee cup and let me drink it for Pete’s sake! It is also really well seasoned, I gave mine a little extra sprinkle of chili powder and sweet smoked paprika just for a little deeper flavor. I also really liked having the beans in it, it gives a little protein boost into something that could otherwise just be a carb fest with all the chips.
In the end, this might not be something that I make often, but I will definitely keep it in my back pocket for a party, hence PARTY QUESO!
