| Joanna Gaines tells us in her story at the top of this recipe that artichokes are just a really great vehicle for eating butter. And I have to say I have the same sentiment, and the real star of this recipe is the garlic butter and the fantastic mix of flavors she blends together.
She suggests the addition of oil from sun-dried tomatoes, something I just never would have thought of, and it is really delicious. It gives the butter a depth of flavor that keeps it from just tasting greasy. I mean, butter, garlic, and lemon OH my! It’s like a match made in heaven.
I made these for family dinner night and everyone acted like I had served them something from an alien planet. I think it’s been about 10 years since I have served them artichokes, personally, I think I needed to serve them more, but they weren’t so on board. Ok, I hear you, maybe you have never had one either, but I would absolutely encourage you to give these a go. The butter is the star, but that’s what you want, it brings the flavor. You have to put in some work to get to the diamond at the end, but it really is all worth it! It takes some time, but you get to enjoy a delicious little flavor nugget at the bottom of each leaf and a dip of butter to boot. I love artichokes any way I can get them, but the soft tender heart at the middle dipped in this butter, is THE BEST!
Whether eating a whole artichoke is common or uncommon to you, I hope you give these a try. I think in today’s day, in our fast food, busy lifestyle world that we live in, this would 100% be slow food. But I think that is the beauty of it. You have to sit and enjoy this. You have to take time to eat it and get to the good part. And I think that is ok to do once in a while. So take some time, maybe learn something new, and maybe laugh about it a little. After all, that’s what food is really about!

This Tovolo jar scraper has to be my single favorite kitchen tool, it is definitely the most used tool in my kitchen. If you are NOT a gadget person, this is the only necessity I say is a MUST beyond the wooden spoon.
A great wood spoon is essential, this Olive Wood one is my favorite, I have more than I can count. ? But can you really ever have too many?
A food scale can be a very important tool in your kitchen, this one is the one I use every day!
