| Y'all, I have to say that this just might be the prettiest dish in the cookbook. The colors bounce off of each other so nicely and the flavors work together absolutely fantastically. This one just might be competing for my number 2 favorite in the entire book.
This dish has the most perfect combination of comforting flavors. What's better than the mix of creamy sauce, with tart sun-dried tomatoes and artichokes, earthy kale and the sweet and salty nuttiness that the walnuts bring all on top of perfectly cooked pasta. It's like the perfect food love affair. And beautiful to boot!
The best tip that I can give you on this one is that is really is best eaten the day it is made. We didn't eat it all the same day and the leftovers that I reheated the next day just weren't quite as good. The sauce started to break and got a little oily. It wasn't terrible but just not like it was fresh.
This is a recipe that I think will live in my back pocket for a while. It is going to become one of those things that I keep the ingredients for on hand all of the time. It goes with just about anything, chicken, beef or fish and will round out any of them even when simply seasoned with salt and pepper. I have suggested some little tweaks here and there to many of the recipes in the book but I wouldn't change anything on this one.
