If I have ever fallen in love with a chicken dish, I might have just fallen for this one! The Grilled Bruschetta Chicken recipe that Joanna Gaines shares in the Magnolia Table Cookbook Vol.2 is my new favorite way to serve and eat chicken.

This recipe could not be easier to make, and it packs a flavor punch that had me coming back, again and again, all summer long! I really did fall in love, and it is one of those recipes that I can keep the ingredients around for and whip up on a whim.
The minimal ingredient list also helps. That keeps it on my shortlist, along with my favorite combo or tomatoes and feta and a drizzle of nice olive oil.
The reaction...
I have discovered this really great organic feta at Costco that comes in a tub of brining liquid. It is super soft and crumbly and has a beautifully smooth texture, and used in this dish is made it something I'd want to eat every day!
It makes a great light lunch, but if you get your hands on some beautifully ripe tomatoes it can quickly become a hearty dinner when served with a side of rice or pasta.
The family loved it and the simple mix of fresh herbs and really great olive oil are what makes this great. Invest in the best olive oil you can get your hands on or are willing to buy. Cold-pressed olive oil has my favorite flavor and will give this simple dish the boost that makes it great!
The TIPS...
Mix the tomato salad well with its seasonings and the olive oil, taste, and adjust the seasoning as needed...BEFORE you add the cheese pieces in. This will keep the cheese from leaving a milky white coating over your tomatoes. This is really just a stylistic thing, it keeps the tomatoes looking nice and fresh, but it's my little chef/photographer secret!
When it comes to the chicken, I actually cooked mine inside on a grill pan that has a lid. I love this method because after I sear the first side and flip it over I put the lid on and turn off the heat after about 3 minutes. This allows the chicken to finish cooking slowly and will result in a more tender and juicy chicken breast.
FRESH HERBS. If you ever were 100% sure to use them, this is the time and place. Be sure to hunt down the fresh basil, you won't be sorry!
Overall, this Grilled Bruschetta Chicken is a recipe I look forward to making again and again. Fresh tomatoes, tangy salty feta, and a tender chicken breast = the perfect dinner in my book!
