If you enjoy drinking martini's then meet the perfect martini lovers snack. Pair this Martini Chicken Salad with a frosty martini for lunch, brunch, or an afternoon snack.

If you follow me on social media you may have seen one of my Martini Monday segments. I have enjoyed creating many martini variations, some with my friend Lindsay and her husband, this is another one of those Kreations!
Ingredients
This Martini Chicken Salad has all of the things you know and love about a martini, with a few enhancements for balance and flavor. It even has a splash of vodka in it and a few sprits of vermouth, which you can absolutely leave out if you are serving it to the whole family.
I make quick work of this one by picking up a rotisserie chicken to use for it while I'm at Costco. But when I have some extra time, I like to make Poached Chicken for it, there's just something so much better about it when I make it from scratch.
What you need:
- Rotisserie or Poached Chicken
- Yellow Onion
- Fresh Lemon
- Rosé or White Balsamic Vinegar
- Vodka
- Vermouth
- Hellmanns Mayonaise
- Spanish Queen Olives
- Mozzarella Pearls
- Fresh Cracked Black Pepper

Method
First, slice the onion nice and thin, and place it in a bowl with the lemon zest and vinegar, stir them together and let them marinate for about 5 minutes.
Then add in the mayo, vodka, and vermouth and stir to combine. This makes you a nice dressing to toss the chicken in.
Add the dressing to the chicken, along with the olive, mozzarella pearls, and a good crack of black pepper. Give everything a good stir, and if you have the time let it marinate in the fridge for a few hours. It can be served immediately, but it just gets better with age.
I like to get just a little bit fancy when I serve it, and why not enjoy it? I have a set of beautiful vintage martini glasses, serving it in them is fun and fancy. It's ok to make it nice, even just for you!
I've been on a big chicken salad kick lately. It all started with my Simple Chicken Salad and quickly escalated to the more adventurous Green Goddess Chicken Salad. Martini Chicken Salad
If you enjoy drinking martini's meet the martini lovers snack. Pair this Martini Chicken Salad with a frosty one for lunch, brunch, or snack.
Ingredients
- 1 Rotisserie Chicken, shredded and diced
- 1 medium Yellow Onion, sliced
- 1 Lemon, zested
- 2 tablespoons Rosé or White Balsamic Vinegar
- 1 tablespoon Vodka
- 4-6 spritz Vermouth, from an atomizer
- 1 ½ cups Hellmanns Mayonaise
- ½ cup Spanish Queen Olives, chopped
- 1, 8 ounce package Mozzarella Pearls
- 1 teaspoon Fresh Cracked Black Pepper
Instructions
- Shred a rotisserie chicken, then give it a rough chop so it is in small pieces. Place it in a large bowl and reserve until needed.
- In a medium bowl, combine the finely sliced onion, lemon zest, and vinegar, and toss to combine. Let it rest for about 5 minutes before adding the remaining ingredients.
- Stir the vodka, vermouth, and mayonnaise into the bowl to form the dressing.
- Place the dressing and the chopped olives into the large bowl with the chicken and toss to coat.
- Fold in the mozzarella pearls and pepper then let the salad marinate in the fridge for a couple of hours for best flavor.
Notes
Alternatively, you can swap the shredded rotisserie chicken for 4-5 cups of poached chicken that has been shredded.
