I'll be the first to admit, this might be a little fancy, but it's totally delicious! There is nothing wrong with making your lunch nice, even just for you once in a while, and this Cobb Style Chicken Salad is the epitome of nice!

This is a great place to use my Poached Chicken recipe. You could also go the more simple route and use a shredded rotisserie chicken if you like.
I also whip up a fresh ranch dressing in the bottom of the bowl before adding the chicken. If you already have some in the fridge, you could use my restaurant-style ranch dressing as a shortcut.
Ingredients
This ingredient list is twofold. You have the dressing ingredients that you will then toss the chicken in. You also have all the toppings.
You may want to take a few minutes to prepare them before serving if you want to get a little fancy with it. I boil and peel the eggs, slice my tomatoes, crumble the blue cheese, and crisp up some bacon bits, while saving the avocado for the last minute.
The best thing I have ever done is use the Costco bacon bits and simply crisp them up in a hot skillet before serving. This makes them like cooking and crumbling fresh bacon, without all the effort. Warm them until they foam up, then turn them out onto a towel-lined plate or pan to cool.

- Chives
- Shredded Chicken
- Boiled Eggs
- Bacon
- Avocado
- Cherry Tomatoes
- Blue Cheese

Method
To start, I first make a quick ranch dressing in the bottom of a large bowl. Combine the mayo, sour cream, fresh chives, Worcestershire sauce, and ranch seasoning and whisk to combine.
Add your shredded chicken right on top of the dressing, and toss to coat. I also add in a sprinkle of bacon, some halved tomatoes, diced avocado, and a little blue cheese right into the chicken salad mixture as well, reserving some for topping if you want to be fancy as you see in my pictures.
Toast a nice slice of white bread, top it with the chicken mixture, and then line the top with avocado, bacon, cheese, egg, and tomato as desired. Traditionally a Cobb salad has all of these ingredients lined up like this, so this is meant to mimic that.

Cobb Style Chicken Salad

Ingredients
- 1 cup Mayonnaise
- ¼ cup Sour Cream
- 1 tablespoon Ranch Seasoning
- 2 dashes Worcestershire Sauce
- Kosher Salt, Morton’s
- Fresh Cracked Black Pepper
- 2 tablespoons Chives, + more for topping
- 2 cups Shredded Chicken, Rotisserie or Poached
- Boiled Eggs, for topping
- Bacon, for topping
- Avocado, for topping
- Grape or Cherry Tomatoes, quartered, for topping
- Blue Cheese, crumbled, for topping
Instructions
- In a large bowl, combine the mayo, sour cream, ranch seasoning, Worcestershire, and chives.
- Place the shredded chicken into the bowl and toss to coat with the dressing.
- Add some half the halved tomatoes and bacon into the bowl, along with some of the avocado and blue cheese, and a pinch of salt, and pepper. Stir until well combined.
- Top the chicken salad mixture on a toasted piece of sandwich bread and top with more avocado, bacon, blue cheese, two quarters of an egg, and more halved tomatoes so it resembles a well laid Cobb salad.
Notes
If you don't feel like going to all the trouble of topping the chicken salad, mix all of the topping ingredients into the chicken mixture, except the eggs, then slice and serve only them on top, or leave them out altogether.
