This Sofrito recipe is one that I got from one of my good friends who got it from her mother and grandmother. It is a traditional family recipe that is used in almost everything in Puerto Rican Cooking. This staple condiment packs tons of flavor and brings balance to any dish you add it to!
Sofrito is the main flavor enhancer to the traditional rice dish, Arroz con Gandules. But is an essential condiment for nearly everything. I even like to marinate a pork butt in it and roast it in the instant pot.

Ingredients needed for Sofrito
- Yellow Onions
- Garlic Cloves
- Green Bell Pepper
- Cilantro
You throw all of those ingredients into a blender and pulse until it is a smooth mixture. It gives TONS of flavor to whatever you cook and will quickly become your favorite seasoning.
Once you have your puree, you can keep in in the refrigerator for 3-5 days. If you want to keep it longer you can freeze it in an ice cube tray or even in a ziplock. Just break off a pice at a time and you can add it to anything and everything.

This is my favorite pressure cooker, the Fagor is the same concept as the “Instant Pot” but easier to use in my opinion, if you don’t have one you NEED one, it will be your best friend in the kitchen!
A sharp knife is the most important tool in the kitchen, these Japanese steel “Shun” knives are my favorite! And this is a great starter set to build on. Once you try them you will be in love so use this as a foundation you can build on for years to come.

This giant vat of olive oil is my favorite, I decant it into a smaller bottle for my counter. Or put this spigot on top of a wine bottle!
This Tovolo jar scraper has to be my single favorite kitchen tool, it is definitely the most used tool in my kitchen. If you are NOT a gadget person, this is the only necessity I say is a MUST beyond the wooden spoon.
A great wood spoon is essential, this Olive Wood one is my favorite, I have more than I can count. But can you really ever have too many?
