This Buffalo Chicken Dip starts with a beautifully creamy base of ranch dressing that the entire dip is based on. I don’t know about you but in my house growing up, there wasn’t any better flavor than buffalo chicken and ranch dressing. It reigned supreme fo' sho'!

Ingredients
The ingredient list for this recipe is just about as short as the time it takes to make it. Toss everything in a stand mixer, I do this to make it super quick and fast, but you could do it by hand, then pour it in a dish and bake.
Make this even easier for yourself and buy a rotisserie chicken and shred it the moment you bring it home from the store. I even find already pulled rotisserie at my store sometimes, grab that if you find it, it's totally worth using.

Method
I love starting this dip with a base of homemade ranch dressing because it builds the flavor in just the right way. And what’s better than ranch dressing? Nothing if you ask me. Start by mixing together the mayonnaise and buttermilk with the ranch dressing mix.
Then I add in the meat of one shredded rotisserie chicken, buffalo sauce, and some cheddar and blue cheeses. Finish with a gentle fold of green onions and it is ready to go in the baking dish. I love to use individual 6-inch cast-iron skillets, but the recipe perfectly fills a deep pie dish as well, or an 8x8 baking dish.
Top the dip with a sprinkle of cheddar or Colby-Jack cheese to give it a nice crisp topping while it bakes.
My favorite way to eat this Buffalo Chicken Dip is with Fritos scoops, but it is equally good spread on French bread or with any type of corn chips.

This recipe fills a deep pie dish perfectly, you can also put it in individual cast iron skillets, it fills 4 - 6-inch skillets perfectly.

Buffalo Chicken Cheese Dip
I like to reserve this dip for the fall when football games are on and the air is crips, but it honestly does the job any time of the year!
Ingredients
- ½ cup Mayonnaise
- ½ cup Buttermilk
- ¼ cup Ranch Dressing Mix
- (or 1 cup Ranch Dressing)
- 1 8oz block Cream Cheese, room temp
- 1 Rotisserie Chicken, shredded
- ½ - ¾ cup Buffalo Sauce
- 1 cup Cheddar Cheese + ½ C for topping
- ½ cup Blue Cheese or Gorgonzola
- 1 cup Green Onions, chopped
Instructions
- Prepare a deep pie dish by spraying it with pan spray.
- Preheat oven to 350 degrees.
- In a stand mixer fitted with the paddle attachment, combine the mayo, buttermilk, and ranch dressing mix. Mix until combined.
- Add in the softened cream cheese and mix to combine.
- Add in the chicken, buffalo sauce, cheddar, and blue cheese, mix on low speed until combined. Gently fold in the green onions, reserving a small handful for garnishing the top after it is baked.
- Place mixture in the prepared baking dish and top with remaining cheddar cheese and bake for about 35 minutes until the cheese on top has melted and is golden brown.
- Top with the reserved green onions and serve with corn chips or fresh bread.
