These fantastic bite sized Loaded Baked Potato Bites are the perfect football food or holiday appetizer. I have a great addoration for these tiny little yukon gold potaotes anyway, this just gives me one more great excuse to cook with them.
These are about as simple as it gets to make. You start by steaming your baby potatoes in the instant pot, then letting them cool, give them a squish, top with cheese and toast them up. Top them with some sour cream and bacon and they are ready to become poppable.
Assembling your Potato Bites
So I apply the same rules of thumb to these that I would to a regular baked potato. Once steamed I toss them in a little bit of olive oil, salt, and pepper. Then slice them open on top and use your thumb and forefinger to give them a gentle squeeze until they open and the interior fluffs out.
Now here is where it gets really good! I finely grate some of the best white cheddar cheese that I can get my hands on and FILL the openings with it. Then toss them under the broiler or in the toaster oven to let the cheese melt and give a gentle crisp to the potato.
I also cook my bacon on the toaster oven while the potatoes steam but feel free to use some bacon bits if that makes life a lot easier for you. Just throw it on top of the cheese when you melt it to warm it and crisp it a little.
Then top each potato with a tiny dollop of sour cream and some bacon shards. Finish them off with a dusting of chives or green onions. These just really round out all the flavors and gives them a little fresh crunch.

This is my favorite pressure cooker, the Fagor is the same concept as the “Instant Pot” but easier to use in my opinion, if you don’t have one you NEED one, it will be your best friend in the kitchen!
A sharp knife is the most important tool in the kitchen, these Japanese steel “Shun” knives are my favorite! And this is a great starter set to build on. Once you try them you will be in love so use this as a foundation you can build on for years to come.
This Scanpan 11″ skillet is just the right size for almost anything you will need to cook and my best friend and a real workhorse in my kitchen, it’s also a great deal at $99. This giant vat of olive oil is my favorite, I decant it into a smaller bottle for my counter. Or put this spigot on top of a wine bottle!
This Tovolo jar scraper has to be my single favorite kitchen tool, it is definitely the most used tool in my kitchen. If you are NOT a gadget person, this is the only necessity I say is a MUST beyond the wooden spoon.
A great wood spoon is essential, this Olive Wood one is my favorite, I have more than I can count. But can you really ever have too many?
