Joanna Gaines shares at the top of this recipe from the Magnolia Table Cookbook that this is a precious recipe that a friend of the family would always include when they would bring a meal to the Gaines. Jo shares that it never failed, and she loved them so much she got special permission to share Gail's mother's recipe in the cookbook.
I am so glad that she agreed to share this fantastic family treasure because they are truly that, FANTASTIC! Lemon desserts are not typically my go-to, but I have really been enjoying all the citrus flavors coming out of this cookbook. From the crisp shortbread cookie-like crust to the perfectly sweet and tart lemon filling there isn't anything not to like about these Lemon Bars.
The only real pro tip that I can share on this one is to mix your crust just right. Joanna mentions in the recipe not to work the dough too much, but I feel like I undermixed mine to the point that it basically crumbled when I cut my bars. I did wait until they were completely cool as she says to do, but even then the crust was coming up with the knife as I cut. The second circle from the outside seemed to be cooked the best, the outside was just a little over and the middle was cooked but just seemed to be a little under. This was the first time for me to make a lemon bar like this so I am a little inexperienced with how they are expected to come out.
