This recipe for French Onion Dip that Joanna Gaines shares in the Magnolia Table Cookbook Vol. 2 and on her cooking show by the same name really is OUT OF THIS WORLD. Ok, so you have to go into this recipe knowing that it is quite a bit more effort than going to the store and buying some chip dip, opening it, and putting it out for enjoyment. It costs a bit more too, but beyond that, it is 100% delicious and worth every penny and ounce of effort.
Joanna shares at the top of the recipe that a friend always makes this as a New Year's Day party dip, and it always the first thing to disappear. And in the end, the only real effort comes in the wait time as the onions caramelize. Do this over medium-low heat and just be patient.
All the patience waiting for the onions to caramelize is totally worth it when you have that first bite. Sweet chunks of caramelized onion and the smooth creamy dip will have you diving back in, again, and again, and again. It gives me flashbacks of growing up and having ruffles and store-bought dip and my grandmother telling me, "one chip at a time".
You definitely will have to exhibit some self-control to only eat this dip one chip at a time.
Don't worry too much about what size your onions are when you chop them,. You could even just dice them from the start to skip the step of cooling them, putting them back on your cutting board, and chopping them finer. I never understand why people write recipes that make you work twice, but that would be my biggest suggestion with this recipe.
Diced onions caramelize just as well as sliced onions, so skip a step and have one less mess to clean up, cause wet caramelized onions are a mess.
Overall, I completely understand why Jo say's at the top of the recipe in the book that this is always the first thing to go when presented at a party. It is pretty dang delicous, I almost want to eat it with a spoon.
